SERIES ONE WHISKEY
The use of copper pot stills, cypress fermentation tanks, and wild yeast gathered by hand, combined with the unique geography of Kentucky are what tease out the subtle variations and nuances that make this whiskey special.
SERIES ONE SMALL BATCH
The Hidden Barn Small Batch is produced at the Neeley Family Distillery (DSP-KY-20039) Sparta, KY, with a 70% Corn, 20% Rye, 10% Malted Barley mash bill. The Small Batch is fermented for five days using wild-caught Kentucky yeast and Northern Kentucky aquifer water. It is then double pot distilled and collected at 127 proof. The distillate is then matured in a two-year seasoned American white oak barrel and filled at 110 proof using only a Sediment filter.

KENTUCKY STRAIGHT BOURBON FINISHED IN MADEIRA CASKS
TASTING NOTES: Adventurous with hints of sweet and smoky undertone and dried fruits
SERIES TWO WHISKEY
We opted for a high rye mashbill to showcase the multifaceted contribution this flavorful grain brings to a bourbon recipe.
SERIES TWO SMALL BATCH
Series Two brings together pot still production and generously high rye mashbill, resulting in a flavorful and complex spirit. Barrels were distilled at M.B. Roland. The mash is fermented for three-four days using Christian County, Kentucky water and industry standard yeast. It is then double pot distilled and collected at 110 proof. The undiluted distillate is then matured in wood-fired Kelvin Cooperage American White Oak barrels. Barrels rest on property, and once matured, are filtered only for sediment before bottling. Located in Pembroke, Kentucky, M.B. Roland was the founding distillery of the Kentucky Bourbon Craft Trail.
